Kerala Coconut Curry Pili Nut Rice


  • 1 1/2 Cup Uncooked Basmati Rice 
  • 1/4 Cup of Ghee 
  • 1 Cup of Onions sliced or diced
  • 3/4 tsp Ginger Paste
  • 1/2 Cup of Cashews crushed
  • 1/2 Cup of Kerala Coconut Curry Pili Nuts
  • 1 Star Anise
  • 1/2 tsp Fennel Seeds
  • 1 Bay Leaf
  • 2 Cinnamon Sticks
  • Salt


  • Soak Basmati Rice in water for around 30 minutes. When done, drain water completely.
  • Bring 2 1/2 cups of water to a boil in a medium pot
  • Heat the ghee in a deep saucepan and after the ghee is completely melted add in the cashews. Cook them until golden and stir occasionally.
  • Add half of the sliced onions and cook until they are fried and browning. When done, scoop everything into a separate plate and set aside
  • In the same pan, add all the spices and cook on medium heat until they release aromas. Be careful not to burn them and stir occasionally. Add remaining onions and ginger paste.
  • Add drained basmati rice and fry for 2 minutes on medium heat. Stir gently.
  • Season with salt and add boiling water. Cover and cook until all of the water is absorbed (usually 5-8 minutes)
  • When fully cooked, fluff the rice with a fork and turn off heat. Leave it covered for another 5 minutes. After 5 minutes add in the Kerala Coconut Curry Pili nuts and stir.
  • When finished plate rice and top with ingredients you set aside earlier. Tpo with more pili nuts and enjoy!
